What Is a Lime Rickey?

A Lime Rickey is a non-alcoholic sparkling drink made with fresh lime juice, sugar, and club soda — bright, citrusy, and just sweet enough. Our Cape Cod version adds a handful of crushed New England blueberries for a seasonal twist that makes it as beautiful in the glass as it is on the palate.

Cape Lime Rickey Recipe

Makes 4 servings

Ingredients

• ½ lime, quartered
• 4 oz. fresh lime juice
• ½ cup sugar
• 1½ cups crushed ice
• A few fresh New England blueberries, crushed
• 4 oz. club soda

Optional: A splash of gin turns this into a lovely summer cocktail for porch-side afternoons.

Directions:

1. Muddle the lime. Crush a couple of the lime quarters in the bottom of each glass to release the oils and juice.
2. Blend the base. Combine the fresh lime juice, sugar, and crushed ice in a blender and mix until smooth and slushy.
3. Fill the glasses. Pour the lime-ice mixture into each glass until about halfway full.
4. Add the blueberries. Drop a few crushed blueberries into each glass for a burst of color and Cape Cod character.
5. Top with club soda. Add the club soda, give it a gentle stir, and serve immediately.
