Pumpkin Pie Filling
Pumpkin pie on an antique bench.
Preheat oven to 350 degrees Fahrenheit.
Ingredients:
- 1 softened 8 oz. package of cream cheese
- 2 cups pumpkin puree
- 1 cup granulated sugar
- 1/4 teaspoons salt
- 1 large egg plus 2 egg yolks, slightly beaten
- 1 cup light cream
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin pie spice blend
- 8 slices of sharp cheddar cheese
Directions:
In a large mixing bowl, beat the cream cheese and pumpkin puree until combined. Add the sugar and salt. Add the egg mixture, butter, light cream and vanilla. Last add the pumpkin pie spice mix and stir well.
Pour the filling into the prepared pie shell and bake for fifty minutes or until the center is set. Remove from the oven and cool on a wire rack.
Serve with a slice of cheddar cheese on top.
