Margarita Cookie Recipe for Cinco de Mayo

We serve these on Cinco de Mayo. They are a nice treat for our guests before venturing to Main Street and Anejo Mexican Bistro & Tequila Bar, where the street is tented, $5.00 margaritas are served and live Latin Samba Music is played all afternoon and into the evening.

Cookie Recipe Ingredients:

  • 1 cup butter
  • 2 cups flour
  • 1/2 cup confectioners’ sugar
  • 1Tbs cornstarch

Directions:

Use mixer to combine ingredients.  Knead by hand until a ball can be formed.
Pat out on a floured surface to 1/4- 3/8 inches thickness.  Cut with a cookie cutter.
Bake on an un-greased sheet for 15 minutes at 350 degrees.
Allow to cool.

Mix Margarita Cookie Icing Recipe and apply to each cookie.

Sprinkle with lime zest while the icing is still soft.
