Margarita Cookie Icing Recipe for Cinco de Mayo
Melt in your mouth Margarita Cookies.
Ingredients:
- 1 cup confectioners’ sugar
- 2 tsp milk
- 1/4 tsp lime juice
- 2 tsp of light corn syrup
- 2 Tbs lime zest
Icing Recipe Directions:
In a medium bowl, stir together confectioners’ sugar and milk until smooth.
Beat in corn syrup and lime juice until icing is smooth and glossy.
If icing is too thick, add more corn syrup.
With a brush, paint the tops of the cooled Margarita Cookies with the icing and sprinkle with lime zest.
We serve these on Cinco de Mayo. They are a nice treat for our guests before venturing to Main Street and Anejo Mexican Bistro & Tequila Bar, where the street is tented, $5.00 margaritas are served and live Latin Samba Music is played all afternoon and into the evening.
