Cheesy Cheddar & Potato Breakfast Casserole Recipe
This is another wonderful breakfast casserole you can prepare the evening before and bake just before serving.
- 30 oz bag of frozen shredded potatoes
- 1 Can cheddar soup
- 1 1/2 cups milk
- 1 Tsp salt
- 1 Tsp pepper
- 1 Tsp garlic powder
- 1 Tsp onion powder
- 1 Tsp mustard powder
- 10 eggs
- 2 Cups shredded sharp cheddar cheese
- 1 Tsp paprika
- Chopped onion
- Chopped sweet green, red, and yellow peppers
- Sliced mushrooms
Place potatoes into a greased 12″x 16″ baking dish. Combine next 8 ingredients and mix well. Pour the mixture over the potatoes.
Spread shredded cheese evenly on top, then sprinkle with paprika.
Bake covered at 350 degrees Fahrenheit for 55 minutes or until a knife inserted into the center comes out clean.
