Cape Cod Cottage Cakes
In April we visited The Inn at Manchester in Vermont, a fellow Select Registry B&B. They served their version of old-fashioned cottage cakes. We were delighted with their presentation and decided to add our version, the Cape Cod Cottage Cakes recipe to our collection for 2016. It’s quick and easy to prepare. We have tried it twice this spring and it has been met with rave reviews. These cottage cakes are a little like a cross between a crape and a pancake.
- 2 cups of small curd cottage cheese
- Pinch cinnamon
- 8 eggs beaten
- 8 Tablespoons (one stick) of melted butter
- 1 cup of all-purpose flour
Cape Cod Cottage Cakes Directions:
Using a hand-held blender combine the cottage cheese, cinnamon, eggs, butter, and flour.
Bake on a grill using medium high heat.
Top with home-made preserves, dust with powdered sugar, garnish with freshly picked mint from the garden and serve with warmed maple syrup and sausage patties. Mm-mm good!
