Cape Cranberry Sorbet Recipe
This is an unexpected treat at breakfast, easy to prepare ahead of time, and uniquely Cape Cod.
- 1 Cup whole fresh cranberries
- 1/2 Cup sugar
- 1/2 Cup red wine
- 3/4 Cup fresh orange juice
- 1/2 Tsp orange zest
- 1 Cup fresh orange juice
- Mint leaves for garnish
Combine all the ingredients from group 1 in a saucepan.
Cook over medium heat until the cranberries are soft and break apart. Still continuously while heating. Allow mixture to cool to room temperature. Puree mixture until well blended. Pour into a shallow pan and freeze until solid.
Put mixture into a blender and gradually add 1 cup of orange juice. Process until light and fluffy. Put into a container and refreeze until ready for use.
Serve in small cups and garnish with a mint leaf.
