Palmer House’s Buttermilk Biscuit Recipe

Ingredients

  • 2 Cups sifted all-purpose flout
  • 1 Tsp baking powder
  • 1/2 Tsp salt
  • 3/4 Cups buttermilk
  • 1 Tbs sugar
  • 1/8 Stick of butter, melted

Directions

Preheat oven to 450 degrees.

Mix all ingredients together, roll out to 1/2 inch thickness and cut into 2 inch briskets.

Cook for 10 minutes. Serve immediately with butter and preserves.

Apple Muffin Recipe

Grandmother Leary’s Apple Muffins

They are delicious served hot or cold with a hot cup of tea. As a young girl I remember standing on a chair at grandmother’s kitchen counter while she and Aunt Frances made her Apple Muffins. Aunt Frances was the family’s champion apple peeler. I remember the stories and laughter as we combined the ingredients and spooned the batter into the cups.  

Serves: makes 12 muffins

Ingredients:

  • 1 Cup of white whole wheat flour
  • 1 Cup unbleached all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 Tbl. ground cinnamon
  • 8 Tbl. butter (softened)
  • 1/2 Cup of granulated sugar
  • 3/4 Cups brown sugar (firmly packed)
  • 1 egg
  • 1 1/4 Cups of buttermilk
  • 2 Cups of cored, peeled and chopped apple

Directions:

Preheat oven to 375 degrees. Line a 12 cup muffin pan with paper muffin cups.

Sift together the flours, baking powder, baking soda, salt and cinnamon and set aside.

Mix together the butter, granulated sugar and 1/4 cup of the brown sugar. (Reserve the other 1/2 Cup of brown sugar to sprinkle on top just before popping the muffins into the oven.)

Gradually add the buttermilk to the butter mixture. Stir in the flours mixture and fold in the chopped apple.

Fill the muffin cups 3/4 full of batter and sprinkle tops with the remaining brown sugar.

Bake for 25 minutes or until done. Remove the muffins from the oven and cool on a wire rack.

Ingredients

  • 2 Cups of unbleached all-purpose flour. (I like King Arthur flour.)
  • 1/2 Cup sugar
  • 1/4 tsp. salt
  • 1 Tsp. baking powder
  • 1 Cup dried cranberries
  • 1/2 Cup chopped walnuts
  • 1 Cup milk
  • 1/4 Cup melted butter
  • 2 large eggs

Directions:

Pre-heat oven to 500 degrees.

To make this muffin recipe, start by blending together the dry ingredients. Add berries and nuts and stir them until they are evenly coated with the dry ingredients. In a large bowl, beat the liquid ingredients together until they are light and fluffy. Pour the wet ingredients into the dry. With a wire whisk blend the two for 25 seconds.

Line a 12 cup muffin pan with paper liners and fill the cups 3/4’s full. Drop the temperature to 400 degrees and bake for 20 minutes or until they are golden brown. Remove from the pan and cool on a wire rack. Our guests enjoy them warm with scrambled eggs and bacon.

Notes:

For garish I use sliced tomato and a sprig of basil from the our organic herb garden for color and contrast. We sprinkle the edges of our white plates with paprika.
