Poached Pears are a sweet and warm treat to start your breakfast on Cape Cod. With brown sugar, butter, cinnamon, nutmeg and cloves, this dish is a well suited to winter. We frequently make this with Bartlett pears but any pear will work well.
* For an extra treat replace the yogurt with frozen custard and serve warm.
Our poached pears recipe was given to us by our dear friend Ilona. Many of you may know her because she has been helping us out in the office since we bought the Palmer House. Over the years we have developed a few modifications that reduce the preparation time. This is a big plus when we are making breakfast for forty.
First, we use a melon baller scoop to core the pears. One scoop and it is done. This leaves a nice neat little hollow to pour the brown sugar sauce into, when serving. I also buy tubs of soft butter and I always have one that is not refrigerated. Therefore, it is easier to dab the butter on the back of each pear. The last little short cut that Bill came up with, is to combine the spices together in a 2 oz shaker bottle. He just measures out the spices, stirs them up and snaps on the perforated top. Then we just shake a little on each pear and pop them into the oven. This spice mixture is great to sprinkle into the egg and milk mixture for French toast.
