Gingerbread Pancake Recipe
Gingerbread pancakes with lemon sauce from the Palmer House Inn, located in Falmouth, Cape Cod, Massachusetts, USA.

This Gingerbread pancake recipe is one of our favorites at the Inn. It easy to prepare and an excellent choice if you are serving a large group at home.

Serves 4 to 6.

Ingredients

  • 2 Cups all-purpose flour
  • 1 Tsp ground ginger
  • 1/2 Tsp ground cinnamon
  • 1/4 Tsp ground cloves
  • 1/2 Tsp salt
  • 1 Tsp baking soda
  • 1/4 Cup sugar
  • 3 Eggs, separated
  • 1/2 Cup molasses
  • 1 1/2 Cups non-fat buttermilk
  • 8 Tbs (1 stick) melted butter

Directions

In a large bowl, sift together the flour, ginger, cinnamon, cloves, salt, baking soda, baking powder and sugar. In a medium bowl, whisk together egg yolks, molasses, buttermilk and butter. Pour into dry ingredients; stir until just combined. In a medium bowl, beat egg whites until stiff but not dry. Fold egg whites into batter. Use 1/4 cup of batter for each pancake.

Drop onto hot griddle until light brown on each side. Serve with lemon sauce (Lemon Sauce Recipe).

Gingerbread Pancake Recipe Notes:

Prepare the lemon sauce a day or two ahead of time to give yourself extra time in the morning. Keep the sauce refrigerated until you are ready to use it. Then warm the sauce in a pan and serve with the pancakes hot.

This past year I chose some miniature basil along with some more traditional verities.

There are many locations on the Palmer House Inn’s property where I enjoy spending time, however, without a doubt, our herb garden is my favorite. When we first bought the inn the basic design of the garden had been laid out. There were eight four by four foot plots that had been outlined with cobblestones by the previous owner.  Some of them had been planted with perennials that were well established. There also were two rectangular granite posts at the entrance. However, the entire garden had been neglected for several years. It just looked like a large tangle of leaves and stems. I was not sure where to begin but over the years with lots of trial and error, the design has evolved. I have been to lectures and done some reading and had advice from knowledgeable friends and guests.

The choice of the name for the garden goes back to a time when I had the opportunity to travel in China with one of our daughters. One of the most beautiful places we visited was “The Humble Administrator’s Garden”. It is located in the city of Suzhou and is a miniature garden. It is said to be one of the most beautiful gardens in China. I decided to name our garden in memory of that wonderful trip.

Because these cookies are in such high demand we serve them almost exclusively during the summer months. When we first took over the Palmer House Inn, many years ago, our goal was to please our guest’s every sense. Soft luxuriously scented sheets, elegant music, lovely furnishings, delicious breakfasts & afternoon refreshments. As a result of that goal at 2:30 pm I start to bake the oatmeal cookies, so that as the guests arrive from 3:00 to 6:00, the inn is filled with the aroma of freshly baked cookies. When I place them out on the snack table, I delight when I hear, “Oh they are still warm.”

Ingredients:

  • 1 Cup shortening
  • 1/2 Cup firmly packed brown sugar
  • 2 large eggs
  • 1/2 Cup buttermilk
  • 1 1/2 Cups sifted enriched flour
  • 1 Tsp. baking soda
  • 1 Tsp. baking powder
  • 1 Tsp. salt
  • 1 Tsp. of cinnamon
  • 1 Tsp. of nutmeg
  • 3 Cups McCann’s quick-cooking rolled Irish oats
  • 1/2 Cup raisins

Directions:

Cream together, shortening, brown sugar, and eggs until fluffy. Stir in buttermilk. Sift together dry ingredients; stir into creamed mixture. Stir in rolled oats and raisins. Drop from Tbs. 2 inches apart on greased cookie sheet.

Bake at 400 degrees for 7 to 10 minutes or until lightly browned. Cool slightly and remove from pan.

Notes:

I sometimes like to add 1/2 Cup of dried cranberries to give the cookies a touch of Cape Cod flavor.
