Gluten Free Leprechaun Footprint Pancakes
Serves 2 (makes 4, 5-inch pancakes).
- 1 Cup Gluten free flour
- 1 Egg
- 1 Tbsp canola oil
- 1 Tbsp honey
- 1/4 Cup milk
- Pinch ground cinnamon
- Few raisins
Mix all of the ingredients, except for the raisins, together in a bowl. Add more milk to achieve the desired consistency. More liquid will make thinner pancakes and less liquid for thicker pancakes.
Spoon batter on to hot, lightly oiled, pan or griddle. Use the back of the spoon to spread batter to desired diameter. Place a footpath of raisins across the uncooked side of the pancake. Flip when bubbles form on the surface and edges.
