Berry Red, White & Blue

Recipe Serves: 10-15 depending on presentation size

My grandchildren love this recipe. It combines some of their favorite things – fresh strawberries and fun.

Ingredients

  • ¼ Cup salted butter
  • 4 Cups miniature marshmallows
  • ½ Tsp vanilla extract (optional)
  • 5 Cups rice krispies
  • Star cookie cutter (optional)
  • Cut fresh strawberries (we picked up a few at the Strawberry Festival this year)
  • Fresh blueberries

Recipe Directions

In a large saucepan melt the butter on low heat. When the butter has completely melted, add the marshmallows. After marshmallows have melted completely add vanilla extract (optional). Add rice krispies and stir thoroughly. Use a spatula to press the warm mixture into a greased baking pan or on wax paper to desired thickness. About three eighths to half an inch deep works well.

After the rice krispies cool (approximately 30 minutes), use the cookie cutter or a steady hand to cut out the star shapes. Place star on top of washed, and cut, strawberries and blueberries. Decorate with a bit of red, white and blue for your Independence Day celebrations. Sprinkle with sugar for some sparkle too.

Recipe Tips

While I like the vanilla flavor, for this recipe, my favorite version is the classic version with the simple salty creaminess of the butter and sweet of the marshmallows together. Using butter to grease the bottom of the baking pan is a great way to limit the number of ingredients and adds to that salty flavor.

It is important to spread the rice krispy mixture quickly after mixing, while it is still warm. Frequently, using a larger saucepan can allow for faster mixing without the worry of spilling. Another of my favorite tips is to  rub a bit of butter on the spatula while spreading the rice krispies. It keeps from sticking nicely. Make sure to keep it compact and eliminate any air pockets. This will make for more consistent stars.
